Beer Review: Insurgente La Lupulosa Mexican West Coast IPA
Forget the cloying sweetness and heavy body of modern ‘haze bombs’, Tijuana’s Insurgente La Lupulosa is a masterful, bone-dry defense of the classic West Coast IPA. This beer is a lean, precise machine, showcasing the synergy of Citra, Amarillo, and Simcoe hops against a crystalline malt background. It is sharp, aromatic, and aggressively bitter, a world-class example of a style that is too often watered down. If you want maximum hop flavor without heavy residue, this is essential.
The Experience
Visuals: The pour is exactly what you hope for from a classic West Coast IPA. It is beautiful, brilliant, and crystalline gold-orange, radiating clarity. It is capped by a towering, dense, and fluffy stark white head that persists, leaving intricate, sticky lacing down the sides of the glass as you slowly enjoy it.
Aroma: The nose is a knockout punch of pungent tropical and citrus fruit. It is explosive and complex. Intense, bright notes of red grapefruit zest and sweet mandarin orange dominate the forefront, quickly followed by deeper scents of fresh pine resin and classic “dank” Pacific Northwest hop notes (Simcoe funk). Beneath the initial citrus oil and resin, there is a distinct strawberry and passionfruit character from the Strata hops, adding a subtle tropical dimension that prevents it from feeling singular.
Flavor: The flavor profile is lean, precise, and unapologetically bitter. The initial sip reveals remarkably low malt perceived weight; instead, it provides a very dry, crackery (like soda cracker) foundation. This immediately gives way to waves of vibrant, assertive red grapefruit pith and citrus oil bitterness. There is a complex midpoint where the tropical Strata elements (underripe pineapple, slight diesel funk) merge with a classic Pacific Northwest pine-resin quality.
Mouthfeel: Light-to-medium in body with fine, elevated carbonation that provides a bright, lively, and effervescent snap on the tongue. It feels exceptionally bright. The high level of attenuation and lack of astringency make the 7.3% ABV feel remarkably light. The finish is crisp, clean, and mineral-like, with a snap on the palate that primes the next sip.
La Lupulosa is exactly what I want in a modern West Coast IPA. It respects the core principles of the style, aggressive bitterness and crystal-clear presentation, but executes them with flawless, contemporary precision, using a specific hop bill (Simcoe, Strata) to provide nuanced complexity without the weight of specialty malts. This is a bright, vibrant, and incredibly refreshing beer, a defining statement on the West Coast style.
Perfect For:
Pair with something that can stand up to its bitterness: spicy Thai green curry, sharp aged cheddar, or a well-crusted smash burger. It is best enjoyed fresh.
