Named after the street in Tijuana where Cervecería Insurgente was born, Juan Cordero is a tribute to the brewery’s roots and the vibrant craft scene of Baja California. While many “Mexican Ales” lean toward light lagers, Insurgente plays by West Coast rules. This is a bright, hop-forward APA that bridges the gap between San Diego soul and Tijuana craftsmanship.
Appearance
Pours a glowing, translucent gold with slight copper hues. It’s topped with a finger of frothy white head that maintains decent retention, eventually settling into a thin cap that leaves a light dusting of lace on the glass.
Aroma
The aroma is led by a “dank and tropical” punch, a classic signature of the Ekuanot, Mosaic, and Simcoe hop blend.
The Fruit: Pronounced notes of grapefruit zest, melon, and a hint of dried mango.
The Edge: There is a subtle resinous, piney “dankness” that grounds the sweeter fruit scents.
Tasting Notes
The Lead: Refreshingly crisp. It opens with bright citrus (lemon and orange peel) and a moderate, clean bitterness that hits the mid-palate.
The Body: Light-to-medium body with a very high “crushability” factor. It’s lean enough for a hot day in the Baja sun but has enough malt backbone to feel like a “real” Pale Ale.

Juan Cordero is a benchmark for Mexican craft. It avoids the heavy caramel sweetness found in some older-school Pale Ales, opting instead for a modern, hop-aromatic profile. It is the ultimate “taco shop” beer, capable of cutting through the richness of carne asada or pairing perfectly with fresh ceviche.
