Beer Review: Fort George x Holy Mountain Save My Soul
Double Barrel-Aged Imperial Stout Blend
When two Pacific Northwest powerhouses like Fort George and Holy Mountain collaborate on a project that spends nearly two and a half years in wood, “subtle” is usually the first word out the window. Save My Soul is a towering achievement in barrel management, blending single and double barrel-aged stouts into a singular, obsidian experience.
The Pour
It settles into the glass like motor oil, completely opaque with a deep mahogany fringe. The head is sparse and fleeting, a dark tan foam that leaves a viscous, sugary residue on the glass. At 14.4% ABV, the legs are prominent, signaling the weight of what is to come.
The Nose
The aroma is an absolute cathedral of oak and spirit. Because this is a blend from Basil Hayden, Bernheim, Heaven Hill, and Westland barrels, the complexity is staggering. You get the classic high-rye spice and bright citrus notes from the Basil Hayden, followed by a massive wave of campfire marshmallow, toasted coconut, and the distinct, malty earthiness of Westland’s peat-adjacent profile.
The Palate
The mouthfeel is chewy and velvety, coating the tongue instantly.
Initial hit: Intense dark chocolate fudge and espresso beans.
Mid-palate: The barrels take over. There is a deep, warming bourbon heat that never feels “hot” or solvent-like. Instead, it tastes like vanilla bean, dried figs, and leather.
The Finish: Long and evolving. The sweetness of the Bernheim wheat whiskey balances a slight tannic grip from the 28 months of oak aging.
Final Verdict
This isn’t a beer for a casual Tuesday afternoon. This is a slow sipper meant for a cold night or a celebration. It manages to showcase four different whiskey profiles without any single one muddying the others. It is rich, decadent, and arguably one of the most sophisticated barrel programs to come out of Astoria or Seattle in recent years.
