Beer Review: Fair Isle Brewing – House Lager
Style: German-Style Pilsner / House Lager
Malts: 100% Washington-grown LINC Malts (Genie Pils & Baronesse Pils)
Hops: German Tettnanger
Brewery Location: Seattle, Washington
Fair Isle Brewing has built a stellar reputation on complex, wild, and oak-aged ales that challenge the palate. With the new Fair Isle House Lager, they apply that exact same level of meticulous craftsmanship, patience, and old-world technique to a deceptively simple style. This German-style Pilsner is a triumph of local agriculture, utilizing 100% Washington malts to create an everyday beer that is brilliantly clean, highly expressive, and undeniably crushable.
Appearance
The House Lager pours a stunning, laser-clear pale straw gold, alive with a steady stream of fine, effervescent carbonation. A thick, frothy, snow-white head caps the liquid, showing off excellent structural integrity. As it slowly recedes, it leaves behind a tight, elegant ring of lacing along the glass.
Aroma
The nose is a beautiful tribute to high-quality regional grains. Because Fair Isle allowed this batch to lager for an extended six weeks, the yeast has completely cleaned up, letting the LINC malts take center stage. Expect a rustic, comforting bouquet of fresh-crusted bread, doughy biscuits, and sweet crackers. This clean malt profile is perfectly trimmed by the German Tettnanger hops, which add an elegant, understated layer of floral fields and earthy, noble spice.
Palate & Mouthfeel
On the palate, this lager is brilliantly lean, snappy, and light-bodied, yet it carries a rounded flavor depth that keeps it from ever tasting thin. The mouthfeel is incredibly smooth and velvety, a texture enhanced by the traditional spunding technique (natural carbonation under pressure in the tank).
Up front, the flavor delivers clean, grainy malt sweetness. By the mid-palate, a crisp, peppery noble hop bite sweeps in to balance the grain bill, adding notes of dried herbs and a whisper of lemon zest.
Finish
The finish is ultra-dry, crisp, and wonderfully cleansing. The natural, finely bubbled carbonation works like a palate scrub, wiping away any lingering weight and leaving behind a precise, pleasant hop bitterness. It is a masterclass in balance, forcing you to reach back for the glass before you’ve even fully set it down.
Transitioning from complex wild saisons to a pristine cellar lager is no easy feat, but Fair Isle has executed it flawlessly. By prioritizing time, natural tank carbonation, and exceptional local ingredients, they have created a House Lager that honors old-world German traditions while keeping its feet firmly planted in Pacific Northwest terroir. It is a flawless, premium lager built for everyday drinking.
