Beer Review: Wondrous Brewing Co. | Flagship West Coast IPA
Based in Emeryville, Wondrous Brewing Co. has built a reputation for precision and “clean” brewing, and its flagship West Coast IPA is the embodiment of that philosophy. This is a beer that prioritizes technical execution and drinkability over gimmicky sweetness or heavy haze.
It presents a beautiful, straw-colored clarity with a tight-beaded foam that clings to the glass. It represents the “modern” evolution of the West Coast style: lighter in color, lower in caramel malt influence, and higher in aromatic intensity.
Tasting Notes
- Aroma: A bright and focused bouquet of Meyer lemon, white peach, and jasmine. Unlike the heavier “dank” profiles of some contemporaries, the nose here is airy and floral, with a hint of flinty minerality.
- Flavor Profile: The palate opens with a sharp snap of yellow grapefruit and tangerine. There is a very restrained malt backbone—reminiscent of toasted sourdough or pilsner malt—which provides just enough structure to support the hops without adding weight.
- Mouthfeel: Crisp, lean, and highly effervescent. It has a “snappy” quality that makes it incredibly refreshing, especially in warmer weather.
Finish: The bitterness is firm but refined. It doesn’t coat the tongue with resin; instead, it finishes bone-dry and evaporates quickly, leaving a clean trail of citrus zest.
